The Menomonee River ice trade was a 19th-century and early-20th-century industry, involving the large-scale harvesting, transport and sale of natural ice for domestic consumption and commercial purposes. We pay tribute to that history at the Waterlin. How do you like your ice? Executive Chef Gil Amador grew up in Mexico with a strong family tradition of culinary arts. At a young age he began assisting with family meals and by his teens, Gil knew he wanted to make that culinary tradition his career. Chef Amador came to the United States in 2006 and started cooking at local restaurants while developing his skills. I wanted the menu to be traditional comfort foods all made from scratch, nothing pre-made, says Gil, To me, using locally sourced and inspired foods is so very important. Everything needs to be fresh and authentic, made from scratch with care. In the end, the menu was a total team effort and were excited to share it with the Menomonee Falls community!
