The journey began with James Politis, who the first of the Politis family restaurants, Lackawanna Restaurant in the Hoboken Terminal. James son, George James Politis, Sr. owned the exclusive Union Club in Hoboken, a meeting place for the whos who of the city through the 70s. George, Sr. opened GPs East Rib and Grill along the cliff on Boulevard East with breathtaking views of the NYC skyline. In 1977, GPs moved down the road to its current location on 69th in Guttenberg. George Politis Jr. continues the tradition of Hudson county hospitality with the opening of GPs in Hamilton Park in 2012, a beautiful park side dining location in historic downtown Jersey City.
