For The Win

For the Win was created during the onset of the Coronavirus Lockdowns in March of 2020. Ive always wanted to do a lunch concept at Papilles involving burgers and fried chicken sandwiches. We had to change our concept to survive, so what better time to implement thenew menu? Ive always been somewhat of a burger aficionado, consuming them almost on a daily basis. I knew the style I wanted to go for: a classic American smash burger with a soft bun. I tested many different types of ground beef blends, buns, sauce recipes, and condiments until I found what was to me the most delicious combination. I found that a tremendous amount of technique, nuance, timing and execution go into creating something so simple, yet so delicious. To this day, I experiment with different techniques and flavors, and implement them when I think it enhances the burger. Ive taken the same meticulous approach to our fried chicken sandwich, trying a variety of different seasonings and batters to create a fried chicken breast bursting with flavor, the right amount of spice, and the perfect crispy crust. Im proud of these creations; keeping them inherently authentic and American, yet embellishing them just enough to make them new and exciting.
