Elwin&company

Elwin M. Greenwald grew up in northwest Detroit and attended Cass Technical High School. After graduating, he attended the Center for Creative Studies (now College for Creative Studies), majoring in photography and graphic design. After working in the art and design field Greenwald became interested in developing his creative talents using food as a medium. Using London Chophouse Executive Chef Jimmy Schmidt as his mentor, he went to Annecy, France, to study cooking with the well-known chef/teacher Madeleine Kamman. After an extensive food study program he apprenticed at LAuberge du Pere Bise, a three-star restaurant in nearby Talloires, France. Upon returning from France, Chef Elwin worked at some of Detroits finest food establishments, such as Duglass-Duglass, Tweenys Cafe and Van Dyke Place, where he quickly rose to the executive chef position, which he held for the majority of his 12-year career there. In August of 1990, Chef Elwin opened Elwins Tu-Go, a bistro-style cafe and catering company in Royal Oak, featuring elegant country European fare. One of the breakfast items served at Elwins Tu-Go was scones, based on a recipe developed while he worked with Yvonne Gill at Tweenys Cafe. In just a matter of months, they became so popular, the entire focus of the business turned to the production of scones. Elwin & Company, now located in Berkley, manufactures and ships its famous scones as well as its many other creative bakery items all over the country. Chef Elwin, while still overseeing daily operations at Elwin & Company, pursues other business interests, teaches, lectures, travels and is currently working on a book combining his favorite things: cooking, travel and art.
