At breakfast, customers linger over intensely flavorful sourdough or multigrain bagels balanced between New York airiness and a Montreal-style chew or treats like blueberry-lavender pecan muffins, made with organic barley flour. All of this bakerys breads, bagels and pretzels are based on wild yeast sourdough starter. After doughs are mixed, a day of slow fermentation aids flavor and digestibility. The hand-rolled baguette emerges from the oven crackly-crusted.
