American Elm

Chef Brent hails from Texas where he grew up cooking with family during the holidays. After graduating from Baylor University with a degree in Management, he chose to follow his passion and enrolled in Le Cordon Bleu culinary school in Austin, TX. Upon completing his studies he spent time working in kitchens in Dallas, Austin, and Vail, CO before moving to Denver in 2015. He spent 4 years working for TAG restaurant group as the Executive Chef at Guard & Grace restaurant before joining American Elm as Executive Chef Alexandra is a Denver native and a restaurant industry veteran of over 16 years ~ most of which has been focused on bar services. Alexs many credentials include a BAR 5 certification. Shes earned a BA in Biochemistry and is an avid backcountry snowboarding and climbing enthusiast. Travis was born and raised in a small historic beach town, St. Augustine, on the north coast of Florida. It was here that he entered the Food & Beverage world at the age of 14, working his way up from bussing to bartending. Managing bars at restaurants and hotels led him to Denver where he laded at American Elm as a bartender in 2019. After traveling back to Florida to open Boat Drinks (a cane spirit focused bar) he was once again drawn back to Denver with the opportunity to manage the American Elm bar team. Bob was born and raised in the midwest, primarily in Iowa but also spent time throughout his childhood in Chicago, Green Bay and Kansas City. He left his position as Director of East Coast Operations for Knitting Factory Entertainment in Williamsburg, Brooklyn, to re-engage his passion for restaurants and bars. After visiting and falling in love with Denver, he and his family moved to The Highlands to open American Elm.
