The Taco Shack

When we met and decided to call New Smyrna beach a home to raise our 4 children, we always had a dream to one day have a restaurant of our own. Both of us did the schooling, Michael went to culinary school and Emily got her Hospitality Management degree. Both spentyears working at various restaurants, theme parks, hotels and resorts putting in many hours working for other people, both with a strong desire to be their own boss. A business plan was written by Emily 6 years ago with The Taco Shack idea, but wasnt put into place until the location at 642 N. Dixie Freeway became available. With the support from family and each other The Colons embarked upon their dream! May 18, 2010 they opened the doors to The Taco Shack, having spent many many hours creating their recipes, menu and chill style the shack offers. today, almost a year later, The Taco Shack has made a name for itself in New Smyrna Beach. We call it a family affair, if you stop by you will see Emily at the window, Michael busy preparing your food, with Emilys brother Ryan by his side, Emilys dad will probably run out your food, and the dining room will be kept clean by Emilys Mom or one of our children!
